Rebellyous Foods Secures $2.4 Million to Revolutionize Plant-Based Chicken Production with Innovative Mock 2 System

Seattle-based food tech company Rebellyous Foods has secured an additional $2.4 million in funding, expanding its Series B financing round from 2023, when it raised $9.5 million. The company, which specializes in plant-based chicken alternatives, plans to utilize the new capital to boost sales growth in 2025 and advance the development of its innovative “Mock 2” production system.

The Mock 2 system, unveiled in September, represents a significant advancement in plant-based meat manufacturing. This fully automated, continuous processing system operates with temperature-controlled dough substrate technology and can produce between 2,500 and 5,000 pounds of plant-based meat products hourly on a single production line. Rebellyous has partnered with RMS Foods to implement this technology at a cutting-edge facility in New Mexico.

Christie Lagally, the company’s founder and CEO, has emphasized the transformative potential of the Mock 2 system, describing its introduction as a crucial milestone in food production innovation. The technology aims to make plant-based meat production more
cost-competitive with traditional meat processing while maintaining high-quality standards.

Rebellyous Foods, established in 2017 by Lagally, a former Boeing engineer, has built a significant presence in the institutional food service sector. The company currently supplies its plant-based chicken alternatives, including nuggets, patties, and tenders, to
approximately 275 school districts participating in the National School Lunch Program.

The Mock 2 system’s development addresses one of the primary challenges facing the plant-based meat industry: manufacturing costs. By implementing this new production method, Rebellyous aims to achieve price parity with conventional chicken products while maintaining the quality and consistency of their plant-based alternatives.

Throughout its history, Rebellyous Foods has demonstrated strong fundraising capabilities, with total investment now exceeding $30 million. This latest funding extension strengthens the company’s position as it continues to expand its market presence and refine its manufacturing processes.

The investment comes at a time when the plant-based meat sector is evolving rapidly, with increasing demand for sustainable protein alternatives in institutional settings, particularly in education food service.
